Stir-Fried Bitter Melon with Chicken and Black Bean Sauce

Bitter melon is a staple in Asian cuisine, part of the gourd family and related to notable gourds like zucchini, squash, pumpkin and cucumbers.

We will be making a delicious Stir-Fried Bitter Melon with Chicken and Black Bean Sauce

Bitter melon is known for it's sharp flavor and versatility, it can be enjoyed raw or cooked, pan-fried, steamed, backed and even stuffed when you hollow it out.

What many people don't know about bitter melon is that it packs a lot of good nutrition like fiber, vitamin c (an important micronutrient in disease prevention, bone formation and wound healing.), vitamin A (promotes skin and vision health), and folate (essentail for growth and development). It has also been connected with help improve blood sugar control and cholesterol levels.

What you will Need:

Bitter Melon

Chicken

Garlic

Ginger

Black Bean

Dried Chilli

Oyster Sauce

Oil

Marinate

1. Soy Sauce

2. Salt

3. Sugar

4. Lee Kum Kee Chicken Bouillon

5. Shaoxing Wine

6. corn starch with water

7. oil

Cooking

Wash your bitter melon and cutting it lengthwise. Scoop out the seeds with a spoon to hollow out the fruit, then cut again lengthwise to make smaller strips, and finally cut into smaller pieces by cutting widthwise.

Slicing the chicken into small chunks and marinate it. The marinate is made of soy sauce, salt, sugar, lee kum kee chicken bouillon, Shaoxing wine, corn starch with water and finally oil)

Cut garlic and ginger.

Once everything is cut begin to stir-fry by adding oil to your pan, add your garlic, ginger, chili peppers, and black beans. After add your bitter melon to soften up and stir fry.

In another pan begin to stir-fry your marinated chicken. Add oil to the pan and stir-fry the ginger and garlic and then add your chicken.

Once chicken is semi cook, add in your bitter melon to continue fully cooking the chicken. Once cooked cover to let steam finish the cooking process and at the end add oyster sauce for a glaze.
